Red Rubies In Coconut Milk (tub tim krob (ทับทิมกรอบ))



This is one of my favorite Thai desserts. It's easy to make at home and taste delicious, especially with some Jackfruit.




Red Rubies In Coconut Milk (tub tim krob (ทับทิมกรอบ))

Ingredients

6 Fresh Water Chestnuts, peeled & diced
1 Drop of Red Food Colouring
2 Tbsp of Water
1/3 Cup of Tapioca Starch

Sweetened Coconut Milk
200 ml Coconut Milk
2 Tbsp of Cane Sugar
4 tsp of Rose Water
2 Tbsp of Water
A Big Pinch of Sea Salt

You’ll also need: some crushed ice and Jackfruit (optional)

Method

Make the Sweetened Coconut Milk: Combine coconut milk. sugar, rose water, water & sea salt. Bring it to simmer until sugar dissolves. Remove from the heat and let it cool completely.

Red Rubies: Combine water, colouring and diced water chestnuts, and mix well. Let them sit for about 15 minutes. Spoon coloured chestnuts in tapioca starch, shake well and remove excess starch with a sieve. Bring a pot of water to a boil, over high heat. Drop in the water chestnuts and when they float up, remove and place them into a bowl of cold water.

To serve: Spoon some crushed ice into a bowl. Top with coloured water chestnuts, jackfruit, and sweetened coconut milk. Serve immediately.
