Potato Salad (Japanese-Style)



I'm so pleased with the result of my Japanese-style potato salad. It's light, not too creamy, and it tastes fantastic. I made this salad with yellow potato, carrot, cucumber, and homemade tartar sauce. This salad can be served cold, straight from the fridge, or at room temperature.




Potato Salad (Japanese-Style)

Ingredients

4 Medium-Sized Yellow Potatoes, or any small variety potato, washed
1 Small Carrot, peeled & shredded
1 Small Cucumber, halved & thinly sliced
1 Hard-Boiled Egg

Tartar Sauce (Japanese Style)
12 Tbsp Japanese Style Mayonnaise (1/3 Recipe)
2 Tbsp Chopped White/ Red Onion
3 Cornichons (small pickled gherkins), finely chopped
1 Hard-Boiled Egg, finely chopped
1 Tbsp Chopped Parsley
Sea Salt, to taste
Freshly Ground Black Pepper

Method

Tartar Sauce: Combine all the ingredients, mix well, and season with salt and pepper.

Boil the potatoes with 1/2 tsp of salt until just tender. Drain and lightly mash it.

Combine the potatoes with 1/2 of the prepare tartar sauce, carrot, cucumber, egg, and mix thoroughly. Cover and refrigerate for about 1 to 2 hours before serving.
