This Sago Pudding is a popular dessert in South-East Asia. It's made from sago pearls, and delicious served with the Sweet Coconut Sauce and Palm Sugar Syrup, which I made earlier.
Sago Pudding With Palm Sugar-Gula Melaka
Ingredients
1/2 Cup Pearl Sago, rinsed & drained well
6 Cups of Water
Sweet Coconut Sauce
Palm Sugar Syrup
Method
Place the water in a pot/pan and bring it to a boil. Add sago into the boiling water and stir to keep the grains moving and prevent them from settling to the bottom of the pot/pan. Cook sago for 8 to 10 minutes. Then turn off the heat, cover pan and set aside for 10 minutes. By then, the sago should no longer have any opaque bits, indicating that is cooked. Strain the sago with a sieve, rinse and drain well.
Pour the sago into rinsed small bowl or dessert glasses and chill well.
To serve, turn the sago out and transfer it into a serving plate or bowl. Spoon on some coconut milk and palm sugar syrup.
