Here is my version of Es Teler, a popular shaved ice dessert with fruits in Indonesia. The main ingredients are avocado, jackfruit, young coconut meat, shaved or crushed ice, grass jelly, and tin palm seeds. The dessert is sweetened with sweet coconut sauce, and condensed milk. I don't take the latter, so I have omitted it, and replace with palm sugar syrup, which is often used in many Malaysian and South East Asian desserts.
Es Teler (Shaved Ice With Fruits)
Ingredients
2 Avocado, pitted and diced
1/2 Cup Young Coconut Meat, sliced
6 to 8 pcs Jackfruit, peeled into smaller pieces
1/2 Can Palm Seeds, drained
1/2 Can Cincau/Grass Jelly, diced
2 Cups Shaved or Crushed Ice
1/2 Cup Condensed Milk, optional
Sweet Coconut Sauce
1 1/2 Cup (350ml) Coconut Milk
1/2 Cup Young Coconut Water
2 Tbsp Cane Sugar
2 Pandan Leaf, washed and knotted
A Big Pinch of Sea Salt
Palm Sugar Syrup
250 grams Palm Sugar, grated
150 ml Water
2 Pandan Leaf, washed and knotted
Method
Make the Sweet Coconut Sauce: Simmer coconut milk with coconut water, cane sugar, and pandan leaf, for about 12 to 15 minutes. Let cool completely, and store in the refrigerator.
Palm Sugar Syrup: Combine palm sugar, water, and pandan leaf and bring it to a boil. Reduce the heat and simmer for about 15 minutes, or until the sugar has dissolves and the syrup thicken. Remove from the heat and let cool completely before serving.
To serve: Place some cincau, palm seeds, jackfruit, coconut meat, avocado in a bowl or glass. Top with shaved or crushed ice, some sweet coconut sauce, and drizzle some palm sugar syrup, or condensed milk.
Reminds me of Ice Kacang, but not exactly ice kacang. Not sure about the avocado, but the rest sounds yummy. Looks very pretty too.
