Homemade Pandan Kaya~Pandan Coconut Jam
Ingredients
1 Cup (3 ) Large Duck Eggs or 4 Large Chicken Eggs
1 Cup Coconut Milk
1/2 Cup of Cane Sugar
4 (15 grams) Pandan Leaves, washed, dried & cut into smaller pieces
Method
Grind or pound the Pandan leaves in a pestle mortar, until you have a medium fine paste. Then mix in with the coconut milk, and strain well.
Place the sugar and duck eggs in a mixing bowl. Whisk the eggs and sugar until the sugar dissolves. Then gradually add in the pandan coconut milk, mix until well combine, and strain the mixture into a pot.
Prepare a large saucepan fill with water and a piece of wet kitchen towel over low heat. Place the pot on top of the wet kitchen towel and start stirring constantly with a wooden spoon for about 35 to 40 minutes, or until the mixture is thickened, smooth and with spreadable consistency. Remove the pot and let the pandan kaya cool down completely. Then ppoon the kaya into a clean airtight jar.
Makes 1 1/4 Cups of Pandan Kaya
