Salt and Pepper Shrimps



Salt and Pepper Shrimps is a dish that is often served at Chinese's restaurant. For this recipe, you can also opt to deep-fry the shrimps with shell-on. This is a great dish to serve together with sit-fry vegetables, soup, and steamed rice. 



Salt and Pepper Shrimps

Ingredients

350 grams Peeled & Deviened Shrimps
1 Egg White, beaten
1/2 Cup Sweet Potato/Corn Flour
2 to 3 Cloves Garlic, chopped
2 Green Chilies, Chopped Half & Sliced the other half
3 Scallions, chopped
1/4 tsp Sea Salt
1/8 tsp White Pepper
A pinch of 5-Spice Powder

Method

Dip the shrimp into the beaten egg white, and then coat it with sweet potato or corn flour. Shake-off excess flour, and lay shrimps in a plate or tray. Continue the process with the remainder ingredients.

Heat the oil over medium to high heat. Deep-fry all the shrimps until golden in color. Remove and drain well on a wire strainer or paper towel. Set aside.

Lightly oiled a pan or wok over high heat. Toss in the garlic, green chilies, scallions, 5-spice powder, white pepper, and sea salt. Cook briefly, then add the shrimps, give it a quick stir and mix well. Remove and serve immediately.
