Pineapple Energy Balls


I have another fantastic energy food to share with you today, Pineapple Energy Balls. They are slightly sweeter than my other energy bar recipes. However, there's no added sugar because the dried pineapple itself had been sweetened with organic cane sugar. Tastes so good and my kids just love them, even took some to school to share with their friends!


Pineapple Energy Balls

Ingredients

6 Large (110 g) Medjool Dates, pitted and chopped
1 ½ Cups (240 g) Dried Pineapples, chopped
1 Cup (80 g) Unsweetened Shredded Coconuts
1 Cup (120 g) Raw Almonds (without skin)
1-Cup (140 g) Raw Cashew Nuts
A Pinch of Sea Salt
2 Tbsp Orange Juice

Method

Combine chopped dates, pineapples, coconuts, cashews, almonds, and sea salt in a food processor. Pulse and process all the ingredients together until the texture is coarse. Then add the orange juice, a quick pulse, or until it reaches a dry but moist dough consistency. Scrape the dough mixture into a clean bowl, roll slightly heaped teaspoonfuls of mixture between your palms into compact little balls. Put them on the tray and into the fridge for an hour or so to firm up. Serve chilled or at room temperature.

  1. What an easy, tasty, and healthy mouthful! Love it that you left it to the natural sweetness of dates and pineapple to make this a sweet bit. A great substitute for all of the sugary cookies I shouldn't eat this time of year. :)

  5. Just found this by way of Foodgawker and have to say I'm thrilled to have done so! I'm on the hunt for gf healthy snacks that I can keep on hand - since being diagnosed with celiac I've figured out how to cook appropriately for my new food life for main meals, but am still rather at my wit's end when it comes to feeding myself during the day. On top of that, I'm slowly recovering from a long term illness that had me on bedrest for a good chunk of time, so I'm not really up yet to long cooking sessions. It's a bad loop I've been stuck in. To get the energy to cook more, I need to eat, but to eat, I need to cook more, which I don't have the energy for! Snacks like this are perfect, and I'm incredibly chuffed to find this one. Most of the others I've found have been mainly chocolate - which is great sometimes, but I've been hungry for FOOD, not simply another cookie! My husband is doing a grocery run tomorrow, and these are being made as soon as he gets home. Thanks so much!

Raw Energy Bars~Chocolate, Cashew, And Almond

I get energized everytime I make Raw Energy Bars at home. I have tried several recipes and flavors before; but, this Chocolate, Cashew, and Almond flavor is currently my favorite! It's made from scratch using raw ingredients, such as Medjool dates, cashew, almond, cocoa, and coconut. You will be amazed with the end result. Dumplings

I'm actually laughing at myself! What have I got into? Trying to make dumplings?? Well, I have seen my late grandmother make them a long time ago. I can remember the ingredients but not the measurements! So, it took me about two hours to come up with the perfect recipes, and I'm glad I did! It was an instant hit! They were all gone, all gobbled up! Make the dough first, add about 480 to 500g of all-purpose flour with 300ml of water. Knead the dough and let it rest.
