Frozen Banana Bites


Wishing all the awesome mums out there, a Very Happy Mother's Day 2011! Take the much deserved day off and try to get your kids to pamper you today with this Frozen Banana Bites perhaps? This snack/dessert is really delightful and best of all, it's so easy to make. Even your kids can do it! So, either let them have a go at it or you should give this recipe a try yourself. Have fun!

Frozen Banana Bites

Ingredients

2 Bananas, peeled and sliced (about ¾ inch chunks)
1/3 Cup Bittersweet Chocolate Chips
1/3-Cup Creamy Peanut Butter
A Pinch of Sea Salt
Unsweetened Shredded Coconut

Method

Place the banana chunks on a large plate lined with parchment paper. Place in the freezer for about an hour.

Spread the shredded coconut on a large plate.

Combine the chocolate chips, peanut butter, and sea salt in a microwave saved bowl. Microwave on high for about a minute, stir until smooth.

Dip the frozen banana chunks in the chocolate-peanut butter mixture. Then place it on the shredded coconut and roll lightly to coat all sides. Repeat with the remainder banana chunks. Transfer to the freezer for another hour before serving.

Makes about 12 Banana Frozen Bites

  2. Yummmm. Sounds so good. When my kids were small, I froze thin slices of bananas for them summertimes, but wish I'd thought of this for an occasional extra-special treat. Oh well, I've got grandkids I can try this one on and I know it will be a hit! Thanks.

  6. When I was in junior high school we used to stop after school and get chocolate covered frozen bananas for a snack. Your post sure brought back memories, and this seems like an updated adult version that I'll need to try!

  13. @Pei Suen: Thanks for trying the recipe. No, I don't have any issue with the banana not sticking with the chocolate-peanut butter mixture. However, I find that, if you freeze the banana for a longer period, perhaps three hours. The chocolate mixture will definitely stick to the banana, and you can serve it immediately after coating it with shredded coconut. Try it! Thanks.

  16. I just made these and I had the same issue with the chocolate not sticking to the banana very well so they were kind of messy but still yummy!

  17. I found the mixture didn't want to stick after doing a few slices and realized it's because the bananas begin to melt and are too slippery for the mixture to adhere. Next time, I'll only take a few slices from the freezer at a time and that should solve the problem. These bites are delicious, easy to make and addictive.

Dumplings

I'm actually laughing at myself! What have I got into? Trying to make dumplings?? Well, I have seen my late grandmother make them a long time ago. I can remember the ingredients but not the measurements! So, it took me about two hours to come up with the perfect recipes, and I'm glad I did! It was an instant hit!
