This is one of my favorite roast chickens. They are just packed with all the fantastic flavors from the spices used in the recipe. I served the chicken with some Spicy and Sweet Soy Sauce. Optional of course, I like it as it adds some spiciness to the chicken when eaten with steamed rice. Simply delicious!
Spice-Roasted Chicken
Ingredients
1 Whole Chicken
1 Tbsp Lemongrass Powder
2 Tbsp Galangal Powder
1 Tbsp Chili Powder
1 1/2 tsp Sea Salt
A Pinch Of Turmeric
3 Tbsp Vegetable Oil
Method
Combine all the marinate ingredients. Rub all over the chicken and marinate for about 3 hours.
Preheat the oven to 425˚F. Arrange a baking tray, chicken breast side down and roast for about 1 hour 10 minutes or until the chicken is fully cook.
Cut the chicken into pieces and serve at room temperature.
