This is a wonderful glass noodle salad and sometimes I would serve them as a meal by itself. The salad is easy to prepare and ready in less than 20 minutes. They are full of flavors, spicy, tangy and have a nice crunch from the Chinese celery.

Glass Noodle Salad
Ingredients
80 g Dried Glass Noodles, soaked
12 Prawns, peeled
80 g Minced Chicken or Pork
1/4 Cup of Lime Juice
1/4 Cup of Fish Sauce
1 tsp Sugar
8 Thai Bird's Eye Chilies, chopped
1 stalk Chinese Celery, chopped
2 stalk Coriander, chopped
1/4 Cup Chopped Shallots
2 Tbsp Dried Shrimps (Deep-fried)
Method
Cook the glass noodles, prawns and minced chicken separately and set aside.
In a large mixing bowl, combine the lime juice, fish sauce, sugar and mix well.
Then add in the glass noodles, prawns, chilies, celery, coriander, dried shrimps, shallots and combine well. Serve immediately.
