Cashew Cookies


It's cookie time! I have baked some cookies for the coming Chinese New Year. This is the easiest one to make. They are scrumptious and addictive too!


Cashew Nut Cookies

Ingredients

250 g Pastry Flour, sifted
250 g Ground Cashews
150 g Sugar
1 stick (225 g) Unsalted Butter, cold and cut into smaller pieces
1 tsp Baking Powder
1 tsp Vanilla Extract
1/2 tsp Sea Salt
A handful Of Cashews Halved
1 Egg White for egg wash

Method

Preheat the oven to 180˚C. Line cookie trays with parchment paper.

Combine the flour, ground cashews, baking powder and salt. Mix well in the food processor. Then add the butter and process until the mixture become crumbly.

Add the sugar and vanilla extract and process briefly. Combine the pastry mixture with hand into soft dough. Set aside for about 20 minutes.

Roll the dough lightly on a flour surface to about 3/4 cm thick. Cut into 5 cm rounds with a fluted ring cutter. Press a cashew half in the centre and brush with egg wash.

Bake in the preheated oven for about 18 to 20 minutes. Cool on tray for 3 to 4 minutes and transfer onto wire racks to complete cooling.

  1. Hi there! I'm not able to get pastry flour where I am and I was just wonder if you mixed your own with all-purpose flour and cake flour?

    If you did, what ratio did you go for?

  2. Hi Mrs Ergül, you can use cake flour for the cookies too. Or, to make 2 cups of pastry flour, combine 1 1/3 cups (185 grams) of all-purpose flour with 2/3 cups of (90 grams) cake flour.

  3. Is this really easy? I'm just the one who fails baking cookies. I don't know if I make the mistake in the time of baking or amount of ingredients. or is it my pure destiny? I just want to taste these yummy things...

  6. your cookies look delicious! where do you add in the ground cashews though? and do you take raw cashews and grind them up yourself or buy ground cashews?

  7. @Anonymous: Thanks for pointing out the mistake. I have corrected the recipe. As for the cashews, yes I used raw cashews and I grinded them up myself. Hope you'll try making it.

  8. I made these cookies for some cousins coming over and they really liked them. They tasted great! Next time, I shall watch for whether my cashews were salted or use less salt, the large crunch of salt in cookie were surprising, haha, but otherwise this is a neat recipe.

    can you tell me what type of sugar u use? is it icing sugar? can make it round instead of flat? step 2, can use a stand mixer instead of food processor? i'm not sure if i can use my food processor for this.

    1. It's caster or fine granulated sugar. Yes, you can shape the dough into round ,and flatten it before baking. I'm sure you can use a mixer for this recipe. Perhaps use the flat beater instead of the whisk.

Dumplings

I'm actually laughing at myself! What have I got into? Trying to make dumplings?? Well, I have seen my late grandmother make them a long time ago. I can remember the ingredients but not the measurements! So, it took me about two hours to come up with the perfect recipes, and I'm glad I did! It was an instant hit!
