Baked Potatoes


This is actually a twice-baked potato. They have a good source of carbohydrates, protein and calcium. I have made this for my kids and their friends. Have one and you will be full for the whole day! LOL!




Baked Potatoes

Ingredients

4 Large Russet Potatoes
2 stalks of Scallions, chopped
8 strips of Smoked Bacon, cooked and crumbled
4 Anchovy Fillets in oil, drained and chopped
2 cups of Mix Cheeses (Mozzarella, Cheddar and Monterey Jack) shredded
Ground Black Pepper

Method

Preheat the oven to 400˚F and bake the potatoes for about 50 minutes to an hour or until cooked.

Then, cut the potatoes in half and scoop out the pulp and leave the shell and set aside.

Combine the potato pulp, scallions, bacon, anchovies, 3/4 cup of cheese and some ground black pepper.

Scoop the potato mixtures into the potato shells and top with the remaining cheese. Place the shells on a baking tray and bake for another 15 to 20 minutes until the cheese mixture is melted. Let it cool slightly before serving.

Dumplings

I'm actually laughing at myself! What have I got into? Trying to make dumplings?? Well, I have seen my late grandmother make them a long time ago. I can remember the ingredients but not the measurements! So, it took me about two hours to come up with the perfect recipes, and I'm glad I did! It was an instant hit! They were all gone, all gobbled up! Make the dough first, add about 480 to 500g of all-purpose flour with 300ml of water. Knead the dough and let it rest.
