Well, with the whole day of raining, it seems like a perfect day for nasi lemak. I like comfort food for this type of weather. I am sure everyone has their own preference for comfort food. As for me, I prefer something spicy or just a simple bowl of soup. The rice is cooked with coconut milk, sliced shallots, pandan leaves (screwpine leaves) and salt to taste. I cooked the prawn sambal to go with the coconut rice. To complete the nasi lemak, I pan roasted some peanuts, deep fried some anchovies, sliced some cucumbers and fried eggs! (eggs can be hard boiled or simply fry them) Enjoy!

Wow! That is easily the best-looking nasi lemak I've seen outside of SE Asia. Bravo!!
