What is your response, when your kids goes.. "Mom, can we have pasta with tomato sauce for dinner?" Gee, I am all in for it! Thankfully, I always stock up my pantry with few tins of whole roma tomatoes, tomato paste, sauce and of course the ultimate dried pasta! Today, I'm using dried Fusilli. This is a simple and quick sauce to make.
Roma Tomato Sauce
Ingredients
2 28oz/796 ml tin whole roma tomatoes, drained, seeded and diced
1 yellow onion, diced
3 cloves garlic, chopped
1/2 glass of white wine
1/2 cup of chicken stock or water
3 Tbsp tomato paste
2 tsp dried oregano
2 tsp dried basil
3 Tbsp olive oil
2 tsp sugar
sea salt and freshly ground black pepper to taste
Method
Heat up a medium size saucepan, add the olive oil, diced onions and 2 tsp sugar.
Saute the onions until they are translucent. Add the chopped garlic and cook for another minute. Stir in the tomatoes and tomato paste. Give it a quick stir, the add the white wine and chicken stock or water.
Bring the sauce to a boil, add the dried oregano and basil. Lower the heat, and simmer for about 15 to 20 minutes until the sauce is thick. Season the sauce with sea salt and freshly ground black pepper.
Toss the sauce with cooked pasta and serve immediately.
